Pesto
Pesto can be made with any of the Basils, Mint, or Parsley. This simple recipe allows you to make it in 5 minutes.
3 C. fresh Herb leaves
4 Cloves Garlic
¾ C. grated Parmesan Cheese
½ C. Olive Oil
¼ C. Pine Nuts
Combine all ingredients in food processor and blend until smooth. Toss with pasta, coat foods to be baked, or use as a dip.
If you would like to preserve pesto; combine only the Herb leaves, garlic, nuts, and oil. Cover this paste with a ¼ inch of olive oil and refrigerate in a sealed container. This will keep for several weeks. To serve, mix oil into paste, and add the cheese.
