Chia Pudding

 
Chia (Salvia hispanica) has been known for thousands of years. In fact, the word “chia” actually means “strength” in Mayan. Ounce for ounce, Chia packs a punch of 4 grams of protein and as much as 11 grams of fiber. Chia is a great antioxidant and contains a wonderful source of minerals like Magnesium, Manganese, Calcium and Phosphorus.
Mix:
1/3 Cup Chia Seeds
1 ½ Cup Milk (I use Coconut, but you can use Almond or Hemp milk)
¼ Cup Cocoa
2-5 Tablespoons Maple Syrup or Local Honey
½ teaspoon Cinnamon
¼ teaspoon salt
½ teaspoon Vanilla extract

Chill 3-5 hours or overnight.

Top with fruit, vanilla yogurt, coconut, granola, or whipped cream.

Chia pudding has the consistency of tapioca pudding. Experiment with flavor.
Chia Latte would be an interesting breakfast treat. Substitute Coffee for Cocoa.
