Evergreen [Pine] Needle Syrup
Assorted Evergreen Needles: Pine, Fir, Spruce
Evergreen Cones and Snips of Bark
Orange or Lemon Peel or Slices
Lavender sprigs/ optional
Snip needles to 1 inch lengths. Cover Needles, Cones, Bark Snips, with water by several inches. Add citrus peels or slices and rose hips. I also add several sprigs of Lavender. Bring to boil; turn down heat and simmer until liquid is reduced by half. Add honey in a 1:2 ratio. One part honey to two parts water. i.e. If you have 1 cup of reduced liquid; add ½ cup honey. Refrigerate.
The crisp pine/citrus taste of this syrup invites both adults and kids to savor their medicine. Evergreen syrup is wonderful for sore throat, cough, and congestion during cold and flu season. Can be taken straight or in tea or warm water.
½ teaspoon for kids under 12;
1 teaspoon for older kids and adults.
