Raita

Use fresh mint for this cool refreshment. Cools the palate when served with curried or pungent dishes. 

2 Cucumbers- peeled and coarsely chopped
2 C. Greek Yogurt
3 Tablespoons Lemon Juice
2 Tablespoons Fresh Mint, Chopped
1 Tablespoon Fresh Cilantro, Chopped
½ teaspoon sugar
½ teaspoon kosher salt

Stir together all ingredients. Refrigerate several hours or overnight.
