Tzatziki
Luscious and cooling this Greek sauce is great as a dip or spread with veggies or pita bread. Straining the yogurt for several hours gives more body to the sauce.
32 Oz. strained Yogurt
1 Cucumber, peeled and finely chopped
5 Cloves minced garlic
3 Tablespoons Lemon Juice
1-2 Tablespoons Dill Weed
¼ C. Olive Oil
Salt and Pepper
Strain Yogurt using cheesecloth. Mix a pinch of salt with the cucumber and drain off the juice. Mix all ingredients together. Adjust salt and pepper to taste.
